Appalachian
     - romantic Winter Escape

Get away into winter wonderland. Enjoy a few days in the Appalachians of Quebec. A charming country inn awaits you with nice accommodations, excellent cuisine, and personal service. Winter activities include  dog sleighing, cross country skiing, snowshoeing. A string of well managed horses are at your disposal for daily 2-3 hr rides into the beautiful countryside with its maple forests in the Canadian Appalachians. Ride across the farmlands and wide open spaces with its breathtaking vistas.
Your pallets will be pleased with the meals that consist of homegrown vegetables,  homemade "Duck Foie Gras", Buffalo steaks, Venison and poultry.
If you are interested in learning more about the French/Quebecoise cuisine, you can add 3 cooking classes during your stay.

Activities:
Each day is a new adventure. A couple of hours of horseback can be combined with cross country skiing, skating, or even dog-sledding with prior notice. When you return to the cozy inn, a warm tea or hot chocolate awaits you and a professional relaxing massage session can easily be arranged.

Cooking Classes:



|The cooking classes with Chef Gilles include three afternoon sessions of two hours each (min of 2 participants required).
Classes are flexible and can be catered to your specific interest. You will learn how to prepare great tasting healthy food combined with wine tasting and the description of wines to introduce you to the great French cuisine. Chef Gilles will prepare with you the best tasting sauces to accompany your meals and how to select your dishes with the least amount of fat and low calories. Meats that will be prepared can be Bison, Pork Filet, Beef, or grain fed Chicken and Salmon ... always dependent on what is available at the time. We will also prepare good healthy cookies with whole grain to serve at tea time. Courses may include preparation of the best colorful salads - always using the freshest fruits and vegetables carefully selected. All participants will compare notes, discuss different recipes and enjoy a relaxing time tasting great food in the charming kitchen.
